While cruising the Caribbean we have found sweet plantains to be plentiful. They are a delicious side dish for any meal!
We all know I have a sweet tooth so it is no surprise that I am a bigger fan of the sweet plantains rather than the plantain chips. In order to get them sweeter, you must wait for the skin to turn yellow (the more black spots the better).
Fun Fact plantains ripen from the outside in unlike bananas who ripen from the inside out!
Sweet Plantains
Ingredients:
1/4 cup Coconut oil
2-3 Yellow plantains
Directions:
Heat coconut oil
Cut plantains in diagonal slices
Add to heated oil
Fry until golden brown on both sides (flip halfway through)
Enjoy the sweet plantain goodness!

If you wait until the entire banana is black and has a minimum of three fruit flies circling, then they are the sweetest!! Trust me!!
