What is better than fresh mahi? Coconut crusted mahi!
We generally try to stay away from breaded and fried food but Coconut crusted mahi is just too hard to say no to.
We have found that using mayonnaise instead of eggs and flour is faster as well as easier to clean up.
Coconut Crusted Mahi
Ingredients:
1.5 lbs Filleted Mahi
1/2 cup Mayonaise
1/2 cup Panko
1/2 cup Shredded Coconut
1/2 cup Coconut Oil
Directions:
Cut fish into small cubes or strips.
Dry fish as well as possible (helps mayo stick better)
Put fish in Tupperware that you have a lid to
Add Mayonnaise
Cover Tupperware and shake (make sure all fish is coated in mayonnaise, add more if necessary)
Add shredded coconut and panko to a blender and blend for 30 seconds (this mixes the panko and coconut and also shreds the coconut more)
Add coconut and panko mixture to Tupperware and shake
Make sure all fish is coated in the mixture
Heat coconut oil in a frying pan
Drop a small amount of breaded mixture in heated oil. If it sizzles it is ready.
Add fish to heated oil and fry until golden brown (flip halfway through)
Enjoy the easiest and tastiest coconut-crusted Mahi EVER!
