Fresh From the Tree Coconut Pie Recipe

When we were sailing through the Bahamas last year we made a stop on Crooked Island. We had dinner at  “Gibson’s #2” a local delicious restaurant run by a friendly local, Willie. After our dinner we were served the BEST coconut pie we had ever had. I asked for Willie’s secret and tried to create this fresh from the tree coconut pie as best as I could.  Below is the coconut pie recipe 🙂

Grahm Cracker Crust Fresh off the tree coconut pie recipe

Ingredients

1 1/2 cups finely ground graham cracker crumbs

1/3 cup white sugar

6 tablespoons butter, melted

1/2 teaspoon cinnamon

Directions

Mix graham cracker crumbs, sugar, melted butter, and cinnamon until well blended.

Press mixture into an 8 or 9 inch pie plate.

Bake at 375 degrees F  for 5 minutes.

Coconut Pie Filling

Ingredients

4 fresh off the tree green coconuts **Important** these coconuts have soft, moist meat
2-3 Tbsp Butter
3 Tbsp Sugar
1 tsp Cinnamon Fresh off the tree coconut pie recipe
1 tsp Nutmeg

Blend coconut meat in a blender or food processor.

Fry with butter until it starts to sizzle.

Add sugar, cinnamon, and, nutmeg.

Fry until it smells yummy 😉

Put filling in pie crust.

Bake for 10 minutes at 350 degrees F.
