After three years of living full time on a boat together we have figured out what meals are the easiest to cook and eat while underway. One of our absolute favorite boat recipes is breakfast burritos.
Ingredients for 2 people
5 free range eggs (3 for Billy, 2 for me)
4 pieces of bacon
1 avocado
2 Tbsp’s of shredded Mexican cheese
2 Tbsps of salsa or ketchup
2 large flour tortillas (I wish they made large corn tortillas :()
We try to use as few dishes as possible because fresh water is precious.
- Warm the tortillas either in a skillet, oven, or microwave ( I keep them in the oven on low until everything else is complete).
- Cook the bacon to your liking of crispyness
- Drain majority of bacon grease
- Scramble the eggs in the same pan you cooked the bacon in (the remaining grease will keep the eggs from sticking).
- ย Place your heated tortillas on plates
- Place two pieces of bacon in the center of each tortilla
- ย Add your scrambled eggs on top of the bacon
- Cut the avocado in half and then in slices and place on top of the eggs
- Sprinkle with cheese
- Add the salsa or ketchup
- Enjoy:)
i wish you guys this best of luck but be careful IRS wants their cut. Health Insurance needs to be considered as you get older or if one of you gets sick or hurt. Live for today but plan for the future.
Iโm quite sure this lovely couple pays State and Federal income taxes on wages earned from their seasonal jobs. Additionally, any self employment income would be very easily offset by their business expenses as almost everything would be deductible when itemized. They pay taxes annually on their boat depending on which state it is registered in, they pay sales taxes on everything they purchase, marine fuel, groceries, fishing tackle and supplies, maintenance items for the boat, etc., and purchase fishing licenses for each state they visit further contributing to each economy. They pay fees to state parks they visit, fill out all appropriate paperwork and to be very blunt and honest they probably pay more than their fair share. The breakfast looks delicious and my wife and I are going to try it this weekend. None of us are guaranteed tomorrow and while health insurance and future security are planned for, it never seems to be planned well enough. Iโm jealous and donโt mind admitting it, you two keep it up and enjoy life as much as possible and cherish every moment. You are creating wonderful memories for yourselves as well as millions more who watch you.
Save at least 40 percent as you will have to pay income and self employment taxes.
